Large Green Cardamom (Amomum subulatum), commonly called Badi Elaichi, Black Cardamom, or Nepal Cardamom, is a premium spice widely cultivated in the eastern Himalayan region of India (Sikkim, Darjeeling, Assam) and Nepal.
Unlike small green cardamom (Elettaria cardamomum), large cardamom is bigger, with a reddish-brown pod, and carries a bold, smoky, earthy aroma due to traditional drying over open fire.
It is extensively used in Indian curries, meat dishes, spice blends (garam masala), pickles, and flavored teas, and has a strong presence in Middle Eastern and Asian cuisines.
